Creamy Sweet Potatoes

4 lbs. sweet potatoes, peeled and cooked
5 eggs, slightly beaten
½ c orange juice
½ c butter or margarine, melted
½ c sugar
1 tsp Vanilla
½ tsp ground nutmeg
Dash of salt
Miniature marshmallows

In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg, and salt; mix well. Transfer to a greased 3 quart baking dish. Bake at 350* for 35-40 minutes or until set. Top with marshmallows; return to oven until they begin to puff and melt, about 5 minutes. Makes 10-12 servings.
