Humus


Basic hummus recipe:
1 1\2 cup cooked garbanzo beans
2 tbs. olive oil
2 tbs. tahini (ground sesame seeds) (can be eliminated if you don't like the flavor)
2 tbs. lemon juice

Grind in a blender of food processor. use water or other liquid to help it blend.

The above recipe is a little bland in my opinion, so to spice it up the way I like it:

1 1\2 cup cooked garbanzo beans
2 tbs. olive oil plus extra for the garlic
2 tbs. tahini (ground sesame seeds) (can be eliminated if you don't like the flavor)
2 tbs. lemon juice
2 cups chicken broth
1\3 tsp. cumin
1\3 tsp chili powder
2 tsp. soy sauce
1 bulb of garlic
salt and pepper

Cut garlic in bulb in half with the roots facing down. Douse with olive oil and sprinkle with salt and pepper. Wrap in foil and bake at 350 for about 45 minutes, or until the garlic cloves are a dark tan color and are about the consistency of toothpaste. Wait for garlic to cool, then squeeze the cloves into a bowl being careful to get the paper skins out. Boil the beans in the broth with the cumin and chili powder for 20 minutes. Grind beans with 2 tbs. olive oil, juice, tahini, soy sauce and garlic until smooth. Add broth or water as needed. use as a dip for toasted pita bread, chips, or cut veggies.

Additional add-ins to the original recipe:
fresh mint (very traditional)
fresh parsely
fresh basil
fresh oregano
plain yogurt for a creamy texture
fire roasted red pepper
a dash of cinnamon
sun dried tomatoes


Tahini
1 tsp olive oil (or sesame oil)
1/4 c sesame seeds
1/4 cup water
salt
Blend.

Cheese Ball

4 8oz cream cheese softened
5 oz dried beef minced
1 bunch green onions. Tops and bottoms minced
1 Tbsp accent
2 Tbsp mayonnaise
chopped pecans

Mix softened cheese, accent and mayonnaise. Mix well, blend in dried beef and onions. Mix well. Place on saran wrap, form in ball. Chill. before serving roll in chopped pecans if desired. Let set out to soften before serving. Make 24 hours ahead to let flavors blend.
I let it chill before trying to form it into a ball.

Cheese Ball

8 ounce cream cheese
6 ounce jar of Blue cheese
2, 6 ounce jars Old English cheese
2 Tbs Grated Onion
1 Tsp water
½ Tsp Accent

Mix together and chill for 12 hours. ½ Cup of chopped nuts rolled, topped with marchino cherry.
Serves a bunch. Double batch makes 18 small balls

Cheesy Lemon Spread

2 eggs, slightly beaten
¼ cup lemon juice
3 Tbs. butter or margarine
¾ cup sugar
1 tsp. grated fresh lemon peel
1 8oz pkg. cream cheese

In a heavy pan, mix eggs, juice, butter, sugar, and salt. Bring to a boil while stirring over low heat. Then cook 3 minutes more. Beat cream cheese and lemon peel. When egg mixture is cool, blend into cheese until smooth and store in refrigerator.

Cinnamon Dip

1 pkg. 8oz cream cheese
2 Tbs. Milk
1 tsp. vanilla extract
2-4 Tbs. brown sugar (mix to taste)
1 tsp cinnamon
¼ tsp nutmeg

Combine all ingredients and beat until smooth. Serve with fruit slices or cookies. Store in an airtight container in the fridge.

Chip Beef Dip

1 16 oz. sour cream 1 8 oz. cream cheese
2 ½ jar dried chip beef cut finely. Dash of Accent
½ jar horseradish.

Mix all together chill & serve with assorted crackers.

Dried Beef Spread

2 8 oz. bars of cream cheese
1 C sour cream
1 green pepper (finely chopped)
1 bunch green onions (finely chopped)
5-6 oz. dried beef (finely chopped)

Blend softened cream cheese and sour cream together until smooth. Add other ingredients and chill 2-3 hours. Serve on Ritz or other crackers.

Broccoli Tomato Dip

Cut fresh broccoli into 1 inch chunks, steam until almost tender.
Mix with equal amounts of chopped cold tomatoes
1-2 Tbs. mayonnaise
Salt and pepper to taste

You can top with crumbled bacon if desired
This is delicious served with meat. The hot broccoli and cold tomatoes taste great together. Mix just enough mayo to make it moist, depending on how much broccoli and tomatoes you use.

Hot Spinach Artichoke Dip

1 8oz pkg. cream cheese, softened
1 14oz can artichoke hears, chopped
1 10oz package frozen chopped spinach, drained and thawed
1 can green chilies
½ cup sour cream
¾ cup mayonnaise
1 cup grated parmesan cheese
1 clove garlic, minced

Combine all ingredients, mix well and put into 9 inch quiche dish. Bake at 350 for 25-30 minutes or until bubbly and lightly brown. Serve with chips, pumpernickel bread, or crackers

Spinach Dip

1 pkg. frozen spinach (thaw and squeeze water out)
1 c mayonnaise (not miracle whip)
1 Tbs dried parsley
1 tsp seasoning salt
2-4 stalks chopped green onion
1 c sour cream
1 tsp lemon juice
1 tsp beaumonde
1 can water chestnuts chopped

Spinach Dip

1 pkg. frozen, chopped spinach
16 oz tub sour cream
1 packet ranch salad dressing mix
½ tsp basil
¼ cup chopped onion
½ tsp oregano
1 large round loaf pumpernickel bread

Thaw spinach and drain. Add next five ingredients and mix well. Chill. Hollow out loaf of bread. Cut bread into small cubes. Serve dip in hollowed out bread “bowl”.

Spinach Dip

1 c Hellmann’s mayonnaise
¾ c sour cream
1 pkg. Knorrs dry vegetable soup
1 pkg. frozen spinach
1 8 oz. can Water chestnuts chopped.

Mix ingredients, chill

Hot Artichoke Dip

1 can artichoke hearts, chopped (do not use the marinated kind)
1 cup mayonnaise
1 cup shredded parmesan cheese
1 can diced green chilies

Mix all ingredients together and bake in a casserole dish till bubbly hot (approx 20 minutes) serve with tortilla chills or your favorite crackers.

Crab Dip

1 8 oz pkg. cream cheese
2 tsp Worcestershire sauce
2 tsp lemon juice
2 tsp mayonnaise
1 tsp onion powder
1 tsp garlic powder
1 can crab meat, drained & flaked
1 bottle Heinz chili sauce

Combine first six ingredients and mix well. Shape into ball. Pour chili sauce over ball, covering completely. Cover ball with crab meat. Chill.

Chili Dip

2 cans chili with meat
¾ c green onions or
1 lb. Velveeta or cream cheese
½ can jalapeno peppers

Mix chili, onions or peppers to boiling. Add cheese cook 5 minutes in microwave.

Mexican Vegie Dip

Mix together:
2 blocks cream cheese, softened
1 cup mayonaise
2 Tbs. Taco Seasoning (or more to taste)
spread in a 9x13 pan

Mix together in a bowl:
1 bunch green onion, chopped
1 red bell pepper, diced
1 can black beans, rinsed & drained
1 can corn, drained

Once you've mixed the vegetablestogether in a bowl, spread over cream cheese mixture and serve with chips.

Taco Salad Dip

1 8oz pkg. cream cheese
8oz sour cream
2 Tbs. onion soup mix
2 Tbs. Taco seasoning
1 8oz jar mild taco sauce
3 large tomatoes, chopped
8oz shredded cheese (taco blend)
3 cups lettuce, chopped
1 large onion, chopped
1 large green pepper, chopped

Iin a mixing bowl, blend together cream cheese, sour cream onion soup mix & taco seasoning. Spread mixture evenly over bottom of an 8x8 square or oblong pan. Chill for 2 hours. Just before serving, pour taco sauce over mixture. Layer in order; cheese, tomatoes, lettuce, onions and green pepper.

Vicki’s Dip

1 lb. ground round (browned & drained)
1 lb. pkg. of Velveeta Mild Mexican cheese
1 can Cream of mushroom soup
1 bottle mild Picante sauce ( or hot according to your taste)

Put in crock pot until warm or cheese melts. Serve with Tortilla chips.
Note: An extra bonus with this dip is it is great on top of baked potatoes. A meal by itself, I serve a lot.

Fresh Traditional Salsa

8-10 large tomatoes, diced
1 large yellow or white onion, chopped fine
2/3 green onions chopped including all the green
Cilantro chopped finely – to taste
1 or 2 roasted jalapeno chopped fine (heat in a small skillet till blackened on each side, then put in a plastic bag to sweat till cooled down)
Salt and garlic salt to taste

Mango Salsa

2-3 mangos, peeled and cubed
2 avocados cubed
1 cucumber, cubed
2-3 Tbs lime juice
1 green onion diced
chopped cilantro
½ jalapeno diced (roasted or raw- if raw, remove seeds)

Stir together and serve fresh with tortilla chips. This is great with pork, chicken or fish tacos!
